The quintessential chocolate ingredient...somehow it just works.

We use Madagascan vanilla pods that have been carefully dried and ground into a powder. We learnt that there's actually several different varieties of vanilla that grow in other climes such as Uganda, India and Mexico. They all are very individual and special, but for chocolate there was no doubt about it - it had to be Madagascan.
